METHOD OF MANUFACTURING FREEZE-DRIED CHERRY TOMATO

According to one embodiment of the present invention, a method for manufacturing freeze-dried cherry tomato comprises: a hot water preparation step of preparing hot water; a blanching step of inserting cherry tomato into the hot water to blanch the cherry tomato; a peeling step of peeing the skin of the cherry tomato acquired through the blanching step; a first drying step of frying the cherry tomato acquired through the peeling step with cold air; a rapid-freezing step of freezing the cold dried cherry tomato acquired through the first drying step to -50C or less; and a second drying step of freeze-drying the rapid-frozen cherry tomato acquired through the rapid-freezing step with a freeze-dryer. Thus, storage becomes convenient and long term storage is enhanced. More specifically, the long term storage and transportability of the cherry tomato with a short distribution period and easy to be softened can be improved, and mass production can be realized, so manufacturing costs can be reduced.
