The invention provides a method for producing tomato red and concentrated tomato juice by using fresh high-lycopene-content tomatoes. The fresh high-lycopene-content tomatoes with the lycopene content of 20-40 mg/100 g are used as raw materials, pulping and screening are performed till tomato peels, seeds and residues can be distinguished after smashing, and thin raw tomato pulp is obtained, then the uniform structure and viscosity of the thin raw tomato pulp are deliberately destroyed, the pulp is separated into yellow tomato juice and red raw tomato sauce under the condition of low temperature, the two parts are respectively processed, the tomato juice is produced and concentrated by using the yellow tomato juice, and the tomato red is produced by using the red raw tomato sauce. The uniform structure and viscosity of the thin raw tomato pulp are deliberately destroyed to separate the yellow tomato juice and the red raw tomato sauce under the condition of low temperature, and the two parts are respectively processed. Due to the fact that the raw tomato pulp contains moisture, sugar, pectin, protein and the like which are only 1/5 of the content in the tomato sauce, its structure is also loose at low temperature, and solvent based tomato red extraction under the solvent based tomato red extraction is promoted.
