METHOD FOR PRODUCING FREEZE-DRIED TOMATO

PROBLEM TO BE SOLVED: To provide a method for producing a freeze-dried tomato as a tomato freeze-dried product having chewability in palate feeling, free from causing missing of a jelly-like substance 4 after reconstituting with hot water, and preventing spout of the jelly-like substance 4 from the inside of a tomato cut surface when vertically cutting tomato.SOLUTION: This method for producing the freeze-dried tomato includes a process of washing tomato followed by vertically cutting the tomato to 2, 3 or 4 divisions in the central part including the core part 1, making a hole 7 on a division part 2 of a tomato cut surface after cutting, and soaking the tomato after making a hole in sugar followed by freeze-drying. The freeze-dried tomato produced by the process is excellent in palate feeling, prevents spout of the jelly-like substance 4, and is widely usable for processed food such as instant food.COPYRIGHT: (C)2008,JPO&INPIT
