The invention discloses a method for drying and quick-freezing a tomato, and relates to a method for processing farm and sideline products, in particular to deep-processing of the farm and sideline products. The method for drying and quick-freeing the tomato of the invention comprises the following steps of: a, washing the tomato, cutting the washed tomato into 2 to 8 pieces, and filling the cut tomato pieces into a dish; b, baking the tomato pieces filled in the dish at the temperature of between 85 and 100 DEG C for 4 to 5 hours; c, moving the baked tomato pieces into a refrigerating chamber at the temperature of between 0 and 5 DEG C for refrigerating for 20 to 30 hours; and d, after the tomato pieces are cooled, quick-freezing the tomato pieces at the temperature of -35 DEG C for 4 to 5 hours. By adopting the method for drying and quick-freezing the tomato of the invention, the shortages of nutrient component loss and taste influence of the tomato caused by adopting a cooking method are effectively overcome; quick-freezing is implemented in the situation of ensuring nutrient components and the taste of the tomato, so that the tomato is kept fresh; and the problem of storing the tomato is solved.
