The invention discloses a manufacturing method of tomato with a fish flavor, and relates to the field of food manufacturing method. The manufacturing method is characterized by comprising the following steps: washing a tomato, cutting the tomato into long strips with a length of 3 to 5 centimeters, soaking the tomato strips into brine for twenty minutes, fishing out the tomato strips, draining to remove the water, spraying some starch on the tomato strips, evenly stirring; blending salt, starch, light soy sauce, dark soy sauce, oyster sauce, vinegar, sugar, sesame oil and water so as to obtain a flavoring juice; adding a proper amount of oil in a boiler, heating the oil to 60% of the boiling point, putting the tomato strips covered by starch into the oil, frying the tomato strips until the tomato strips are fully boiled, pressing the fried tomato strips with a spoon, then fishing out the tomato strips, leaving some oil in the boiler, adding ginger and garlic into the boiler, frying the ginger and garlic for a while until the ginger and garlic start to give off fragrance, adding the fried tomato strips and bean paste into the boiler, frying, then adding green pepper and red pepper, frying, finally adding the prepared flavoring juice, and evenly mixing so as to obtain the tomato with a fish flavor. The manufacturing method is simple and convenient. Because the tomato strips are covered by a layer of starch after being soaked in brine, the tomato strips contain little oil after the oil-frying process.
