HIGH-QUALITY TOMATO PROCESSED PRODUCT AND METHOD FOR PRODUCING TOMATO PROCESSED FOOD USING THE SAME

PROBLEM TO BE SOLVED: To obtain a high-quality tomato processed product richly containing flavor inherited from a raw material and active ingredient such as vitamin C, having vivid red tone of color peculiar to tomato without lowering flavor and active ingredient such as vitamin C even if preserving for a long period and having characteristics of a long shelf life without deteriorating tone of color, and to provide a tomato processed food having the characteristics.SOLUTION: This high-quality tomato processed product is obtained by bringing into contact with nitrogen gas a tomato processed product (for instance, a tomato crushing processed product and a grinding processed product, their strained product, their plant tissue decaying enzyme processed product, a product obtained by removing fruit skin, seeds and pulp from the products, and their concentrated product or water diluted product), dividing the product into vapor and liquid, and bringing dissolved oxygen concentration to 3 ppm followed by heat sterilization. High-quality tomato puree, tomato ketchup, tomato soup, tomato cream soup, pizza sauce, tomato juice or tomato mixed juice is obtained by using the high-quality tomato processed product as part or the whole of the raw material.COPYRIGHT: (C)2007,JPO&INPIT
