SUBSTANCE: protein-vegetable bar with tomato flavor is offered. The composition of the bar includes a syrup part and a dry part and contains the following ingredients in kg per 1 batch of 40 kg. The syrup part of the bar contains inulin syrup in the amount of 20.496 kg, ascorbic acid - 0.063 kg, rapeseed oil - 0.357 kg and “Dried tomato” flavoring - 0.084 kg. The dry part of the bar contains soy protein isolate in the amount of 4.750 kg, pea protein isolate - 5.681 kg, hydrolyzed collagen - 0.019 kg, pea fiber - 1.900 kg, paprika powder - 2.850 kg, dry ground tomato - 3.800 kg. Preferably, the bar is additionally covered with dark confectionery glaze without milk and sugar.
EFFECT: expanding the range of protein-vegetable desserts in the form of bars that have a long shelf life, are enriched with protein components and contain the benefits of vegetables, fiber, and plant components, and are suitable for consumption by all categories of people, including those with nut allergies, lactose intolerance, gluten intolerance, and are also sugar-free.
