Protein compositions comprising leghemoglobin, such as isolates and concentrates, can be made from the plants, tissue, fruits, tubers, roots, seeds and leaves. Additionally, methods for generating and using plants, tissue, fruits, tubers, roots, seeds, leaves and protein compositions comprising leghemoglobin are disclosed.
