The present invention relates to a preparation method for a stevia tomato and a stevia tomato prepared thereby. The preparation method of the present invention is to enhance sweetness of a tomato by using stevioside having strong sweetness with few calories, and thus may provide an alternative to consumers who want to reduce sugar intake, may enable uniform distribution of stevioside inside a tomato to maintain consistent taste throughout the tomato, may prevent quality degradation caused by oxidation by coating with vitamin C, which is an antioxidant, and may maintain freshness of a tomato for a long period of time. In addition, the stevia tomato prepared by the preparation method of the present invention has improved oxidation resistance as compared to conventional tomatoes and reduces problems such as discoloration and spoilage, thereby increasing the period for which freshness is maintained, which may contribute to extending the shelf life and increasing commercial value.
