The present invention discloses a preparation method for a high-stability lycopene oil resin for antioxidant nutritional support by low-oxygen enzymatic hydrolysis-ethanol replacement-oil-phase cyclic enrichment extraction, and a product thereof, and belongs to the technical field of processing food and nutritional supplement raw materials. Tomato processing by-products are subjected to peel-seed separation to obtain lycopene-rich tomato peel material; after acidic low-temperature composite enzymatic hydrolysis, food-grade ethanol termination of enzymatic hydrolysis, and replacement dehydration, deoxygenated food-grade composite oil phase is used for low-oxygen cyclic enrichment extraction, followed by centrifugation, filtration, cold precipitation dewaxing, and vacuum devolatilization to obtain the lycopene oil resin. The method can improve the transfer and enrichment effects of lycopene into a food-grade oil phase, and can improve the all-trans lycopene proportion, moisture, ethanol residue, peroxide value, sediment, and accelerated storage stability.
