PASTEURIZED MEAT ANALOGUE COMPRISING PALE FAT MIMICKING PHASE AND RED MUSCLE TISSUE MIMICKING PHASE WITH LITTLE COLOUR MIGRATION

The invention relates to pasteurised meat analogues that comprise at least two differently coloured water-continuous phases that are distinguishable to the human naked eye, including a pale phase and a reddish phase. The reddish phase of the meat analogue contains a combination of two colouring agents that provide an attractive dark red colour similar to that of cured muscle tissue. Despite the fact that the meat analogue of the present invention has been pasteurised, there is little to no migration of this combination of colouring agents from the reddish phase into the pale phase.
