OPTIMIZED METHOD OF PRODUCING FROZEN VEGETABLE AND/OR POTATO PRODUCTS

The present invention relates to a method for producing frozen vegetable and/or potato products, comprising the following steps: - supplying an amount of vegetable and/or potato products; - washing the supplied vegetable and/or potato products to form base vegetable and/or potato products; - heat-treating the base vegetable and/or potato products in a housing to form heat-treated vegetable and/or potato products for at most 40 minutes; - freezing the heat-treated vegetable and/or potato products, wherein a dew point temperature for the air in the housing is set in the range from 70 °C to 99 °C for heat-treating the base vegetable and/or potato products (calculated in accordance with air temperature and relative humidity), wherein, during the heat treatment, the conditions of the air present in the housing are detected which are required to be able to determine the dew point temperature, and these conditions are adjustable in order to achieve and maintain the desired dew point temperature during the heat treatment.
