The optical sensor can measure an absorbance of the clean water and a cleanliness value can be determined based on the measured absorbance. If the cleanliness value is beyond a cleanliness threshold, a deep cleaning is performed on the optical sensor. Otherwise, if the cleanliness value is within the cleanliness threshold, a measurement sample from the food or beverage production operation can be introduced into the optical sensor and a concentration of an antimicrobial agent in the measurement sample determined.
