The constructs may comprise one or more polynucleotides encoding the enzymes L-DOPA 4, 5 -dioxygenase (DODA), cDOPA 5-O-glucosyltransferase (cD0PA5GT), and CYP76AD1. Plants comprising the constructs and methods of using the plants or betalains produced by the plants are also provided.
