The invention relates to a meat analogue comprising a combination of hydrated texturised non-animal protein and a binder, said binder comprising cellulose microfibrils, thermally gelling non-animal protein and water. The invention also provides a method for preparing the meat analogue, said method comprising a high-shear treatment step.
