LOW-SUGAR FRUIT AND VEGETABLE JUICE, LOW-SUGAR ORANGE JUICE, AND METHOD FOR REDUCING SUGAR CONTENT IN SUGAR-CONTAINING BEVERAGE

Provided are a method for reducing sugar content in a sugar-containing beverage and a product prepared by same. The method comprises: contacting a sugar-containing beverage with an immobilized fructosyltransferase for reaction. The immobilized fructosyltransferase has the activity of reducing the sugar content in a sugar-containing beverage and converting sucrose into fructooligosaccharides, thereby giving a beverage having a reduced sugar content and an increased content of fructooligosaccharides compared with the sugar-containing beverage. The acquired low-sugar beverage comprises fructose, glucose, sucrose, and a dietary fiber. The dietary fiber is preferably a fructooligosaccharide. The fructooligosaccharide is preferably a ketose and/or a nystose.
