In particular, the present disclosure relates to a process for producing a mycoprotein product comprising a) cultivating a Neurospora intermedia microorganism in a liquid medium comprising one or more simple organic compound(s) as the primary/sole carbon source under conditions suitable for growth of said microorganism to produce a fermentation broth, b) harvesting the microorganism, conidia of the microorganism, or soluble proteins produced by said microorganism from the fermentation broth to obtain mycoprotein, and optionally c), drying the mycoprotein.
