The edible fiber scaffolds may comprise, for example, soy protein isolate (SPI) and at least one additive, e.g., glycerol or pectin. The glycerol or pectin may facilitate advantageous physical properties that mimic natural meat products. This disclosure also provides methods, systems, and devices for facilitating the culture of cells on the edible fiber scaffolds.
