Disclosed herein are various products/compositions, such as food products and other ingestible products, that comprise beta-1,3-glucan. The beta-1,3-glucan can have a degree of polymerization (DP) of 8 to 27 or 8 to 16, and at least about 90% of the glycosidic linkages of the beta-1,3-glucan are beta-1,3 glycosidic linkages, for example. The beta-1,3-glucan typically is dispersed and/or otherwise undissolved in non-aqueous conditions or low-aqueous conditions within the product. Methods are further disclosed for preparing and using these products.
