Fuente: WIPO "tomato" A process for preparing fructo-oligosaccharides with a high degree of polymerization is disclosed. The process comprises treating a substrate comprising fructo-oligosaccharides with a low degree of polymerization with at least one selected from the group consisting of Aureobasidium pullulans, Aspergillus niger, an enzyme preparation having an endoinulinase activity, and combinations thereof at a temperature in the range of 40 to 60°C to obtain the fructo-oligosaccharides with the high degree of polymerization.
