The invention relates to the technical field of food production and processing, discloses a tomato skin protein extraction method, and solves the problems that the existing tomato skin protein extraction rate is low, a large amount of tomato sauce processing waste is wasted, and the environment is polluted. Drying and crushing the tomato skin; uniformly mixing the crushed tomato peel with deionized water to obtain a tomato peel solution; heating the tomato skin solution for the first time, preserving heat, adding a proper amount of enzyme, stirring, carrying out enzymolysis, then carrying out secondary heating, and stopping enzymolysis; performing high-temperature sterilization on the tomato skin solution after enzymolysis; and adding ethanol into the sterilized solution, stirring until the solution is uniformly mixed, standing for 24-48 hours, centrifuging, washing, and freeze-drying to obtain the protein. The technological process is high in extraction efficiency, the quality of tomato skin protein is good, waste of tomato sauce production waste and pollution to the environment are reduced, comprehensive utilization of resources is achieved, and the concept of green development is met.
