WIPO "processing tomato"
The present invention relates to a processing method capable of preventing microbiological secondary contamination of sterilized tomatoes and embedding raw tomatoes in rice cakes by forming an outer cover with gelatinized starch or rice cakes after washing and sterilizing the raw tomatoes. According to the present invention, tomatoes sterilized by a method using chemicals or hot water are cooked with grain flour, such as rice and gelatinized rice cakes or confectionery, to form an outer cover having a thickness of 1 to 15 mm. According to the present invention, the protective film formed by the outer skin of the rice cake prevents secondary contamination of microorganisms from the outside by forming the protective film, thereby improving storability and hygiene quality. In addition, the present invention can provide a novel processed tomato product with improved taste and nutrition by being integrally formed with a rice cake component made of rice as a main ingredient.
