The present invention relates to the processing of fresh tomatoes and peppers for the manufacture of juice, paste, jam, syrup, spread or chutney, irrespective of plant variety and cultivation (e.g. organic farming or any other method), irrespective of the manufacture mode ( handmade or mechanical or other manufacture), and irrespective of the additional ingredients. The present invention achieves the processing of tomatoes and peppers in a manner that retain all their beneficial ingredients, without the acidic taste of the tomatoes and the bitter aftertaste of the peppers
