The invention discloses a preparation method of a strawberry and tomato composite fruit and vegetable beverage rich in lycopene, and belongs to the technical field of fruit and vegetable processing. The strawberry and tomato compound fruit and vegetable beverage is prepared by mixing the following components in parts by weight: 9 to 12 parts of strawberry puree, 22 to 28 parts of tomato puree, 0.01 to 0.02 part of lycopene-glucosyl stevioside compound, 2 to 4 parts of white granulated sugar, 0.03 to 0.05 part of xanthan gum, 0.03 to 0.05 part of sodium carboxymethyl cellulose, 0.02 to 0.04 part of D-sodium erythorbate, 0.06 to 0.1 part of citric acid and the balance of softened water, wherein the total weight is 100 parts. The lycopene-glucosyl stevioside compound is prepared by performing superfine grinding, ultrasonic treatment and glucosyl stevioside aqueous solution extraction and modification on lycopene in tomato peel. The strawberry and tomato composite fruit and vegetable beverage is rich in nutrition and excellent in flavor, nutritional active substances in tomato peel are effectively enriched, the content of lycopene is higher than 60 mg/L, and the bioavailability of the strawberry and tomato composite fruit and vegetable beverage is remarkably improved. Meanwhile, the use amount of white granulated sugar is reduced, and blood sugar regulation is facilitated.
