The present invention relates to olive oil pickled and dried tomatoes and a manufacturing method thereof and, more specifically, to olive oil pickled and dried tomatoes manufactured by drying tomatoes through a cold air dehumidification drying method, soaking the tomatoes in vinegar water, and then pickling the tomatoes with olive oil and spices, and a manufacturing method thereof. The olive oil pickled dry tomato of the present invention reduces nutrient loss due to heat through cold air dehumidification drying dried at a low temperature, prevents discoloration and taste and aroma destruction, and can manufacture olive oil pickled and dried tomatoes with good texture. In addition, by processing at a low temperature, lycopene of tomatoes can be effectively ingested, and through a process of drying and pickling in olive oil, it is possible to manufacture olive oil pickled and dried tomatoes that can take the effect of olive oil together by increasing storability and taking useful ingredients of olive oil together.
