Formula and production process of cherry tomato beverage rich in lycopene

The invention provides a formula of a cherry tomato beverage rich in lycopene. The formula comprises the following raw materials in parts by weight: 10-12 parts of white granulated sugar, 15-20 partsof cherry tomatoes, 0.04-0.1 part of tea polyphenol, 0.1-0.25 part of a compound emulsifying thickener, 0.1-0.2 part of citric acid, 0.01-0.05 part of edible salt, 0.005-0.01 part of fish collagen peptide, 0.002-0.005 part of oyster peptide and 0.01-0.05 part of food essence. The production process of the cherry tomato beverage comprises the following steps: weighing the cherry tomatoes in parts by weight, adding 20 parts of water, processing the cherry tomatoes into cherry tomato primary pulp by a colloid mill, performing enzymolysis for 2 hours by medium-temperature amylase at 55-65 DEG C, weighing the white granulated sugar, the tea polyphenol, the compound emulsifying thickener, the citric acid, the edible salt, the fish collagen peptide, the oyster peptide and the food essence in parts by weight, and adding 30-40 parts of hot water of 80-85 DEG C; performing shearing and dissolving for 15 minutes, then adding the cherry tomato pulp after enzymolysis, adjusting the acidity, makingthe volume constant, performing uniform stirring, and performing filling and sterilizing. The cherry tomato beverage prepared by the production process disclosed by the invention is fresh and cool inmouth feel and free from the viscous feeling of starch, the content of the lycopene is increased, and the effects of oxidation resistance and the like are enhanced.
