The invention belongs to the field of agricultural product processing, and particularly relates to fermented tomato flour sauce and a production method thereof. The sauce prepared by fermenting fresh tomatoes, flour and soybean meal improves the nutritional value, the bioavailability and the processing depth of the tomatoes, and is good in nutrient absorption; a pure physical processing method is adopted in the processing process, and no chemical reagents such as acid and alkali are used, so that the produced tomatoes have unique fragrance and flavor, and are delicious in color, fine and smooth in taste and long in storage period; and the production method is simple, low in cost, suitable for large-scale industrial production and free of waste residues, waste water and waste gas.
