The invention relates to the technical field of food processing, and particularly discloses convenient and instant tomato egg flower soup and a preparation method thereof. The coriander, the tomatoes and the eggs are used as main raw materials, vacuum sublimation drying is adopted, the fresh color and original taste and flavor of the instant product are perfectly reserved, unique flavor and taste are given to the egg flower soup, it is guaranteed that the instant product is good in color, aroma and taste, and the nutritional value is also achieved.
