The invention provides a composition for improving the quality of a beef granule sausage and a method for processing the beef granule sausage. The composition of the invention comprises papain, lipase, glutamyltranspeptidase, alkaline protease and a water-soluble tomato concentrate. The method for processing the beef granule sausage comprises the following steps: 1) pretreating beef; (2) performing enzyme treatment on beef: performing enzyme treatment on the pretreated beef by using the composition disclosed by the invention; (3) meat mincing: mincing the raw material meat by a meat mincing machine; 4) stirring: adding the raw and auxiliary materials and stirring; 5) sausage filling and cooking; 6) cooling; 7) metering and packaging; and 8) sterilizing. The composition and the method for processing the beef granule sausages provided by the invention can improve the beef quality and improve the texture of the beef and the beef granule sausages.
