The invention relates to a process of making a vegetable mix, particularly for pochero, comprising the steps of rehydrating the onion and garlic, sautéing the onion and garlic, dissolving the corn starch, tomato paste, salt, sugar, and white pepper in water, simmering and stirring the sauce, cutting the vegetables, filling a packing medium with the sauce and vegetables, exhausting the vegetable mix, thermally processing the vegetable mix, cooling the packing medium, and storing the vegetable mix.
