The utility model relates to a process of producing tomato (Lycopersicon esculentum Mill.) salsa with herbs. The utility model involves disinfecting the raw materials such as tomato, onion, garlic, spring onion, bell pepper, and ginger with water and disinfected with a known detergent solution, blanching the tomatoes, peeling the tomatoes, cutting the tomatoes into halves to remove core and seeds, extracting the tomato juice from the seeds and core, chopping peeled tomatoes into small cubes, mixing tomato cubes and juice with vinegar, salt, sugar, onion, garlic, spring onion, bell pepper, and ginger, adding herbs and hydrocolloid to the mixture, simmering the mixture, filling the hot tomato salsa mixture into glass jars then processing at 100�C for 30 minutes in boiling water and allowing to cool and labelled.
