METHOD FOR RECOVERING OIL AND NUTRACEUTICAL AND ORGANOLEPTIC COMPOUNDS FROM OLIVE MILLING WASTES

A method for recovering oil and nutraceutical and organoleptic compounds from olive milling waste comprises the following steps: adding a food grade vegetable oil to waste coming from a first extraction of a virgin olive oil, in which the waste contains vegetation waters and olive-pomace containing residual olive oil; mixing the food grade vegetable oil and the waste, so as to obtain a multiphase mixture comprising an oil phase, an aqueous phase and a solid phase, in which the oil phase comprises the residual olive oil and the food grade vegetable oil, the aqueous phase comprises the vegetation waters and the solid phase comprises the olive-pomace; subjecting the multiphase mixture to mechanical separation, so as to separately obtain the olive-pomace, the vegetation waters and an enriched must-blend that is enriched with nutraceutical and organoleptic compounds, comprising the residual olive oil contained in the waste and the food grade vegetable oil; discarding the olive-pomace and subjecting the vegetation waters to cryoconcentration, so as to obtain concentrated vegetation waters and frozen vegetation waters; discarding the frozen vegetation waters and mixing the concentrated vegetation waters with the enriched must-blend; subjecting to mechanical separation the mixture consisting of the concentrated vegetation waters and of the enriched must-blend, so as to obtain separately vegetation waters, to be discarded, and an oil blend that is enriched with nutraceutical and organoleptic compounds.
