The invention relates to sucrose-free sweetener-free fermented milk and a preparation method thereof, and the sucrose-free sweetener-free fermented milk comprises the following components: 80-94 parts by weight of raw milk; 6-12 parts by weight of desalted whey powder, wherein the ash separation degree of the desalted whey powder is 90%; 0.002 to 0.005 part by weight of a leavening agent and 0.01 to 0.20 part by weight of lactase; the problems that the fermented dairy product without cane sugar and any sweetening agent is sour and astringent in taste and poor in eating taste experience are solved; according to the invention, cane sugar and any sweetening agent are not added, and under the condition that cane sugar and other sweetening agents are not added, lactose naturally existing in the raw materials can be fully utilized and decomposed, so that relatively high sweetness is obtained, the acerbity of the fermented milk is balanced, and the taste experience is improved.
