The invention discloses a production technology of dairy products. The production technology comprises the following steps of S1, performing mixing: mixing a flavoring agent with raw milk; S2, performing preheating: enabling a part of whey protein to be solidified so as to improve the heat stability of casein, and giving appropriate viscosity to finished products; S3, performing homogenizing: maintaining certain pressure so that raw materials are sufficiently and uniformly mixed; S4, performing sterilization: maintaining a certain time at preset temperature so that infectious microbes in the raw milk are killed, guaranteeing normal growth and propagation of lactic acid bacteria, and passivating natural inhibitors in the raw milk; S5, performing cooling and storing; and S6, performing subsequent treatment, wherein the subsequent treatment comprises a manner a of performing inoculation of a fermenting agent, performing fermentation and then performing heating and filling, or a manner b of performing filling. Through the adoption of the production technology, school milk, or solidification type yoghourt, or pure milk, or seasoning milk, which is capable of enriching the brain and benefitting intelligence, rich in nutrition and good in mouth feel can be provided, the nutritive health status of drinkers can be effectively improved, and the healthy quality of bodies of the drinkers is improved; and the dairy products can be automatically produced and processed in the whole course, the possibility that the dairy products are infected in the whole course is extremely low, and the production technology is suitable for industrialized production.
