Process for production of flavour enhancing esters

Patent 517358 A process for producing flavour enhancing esters comprises conducting a transesterfication reaction between a mono-, di-, or triglyceride from a diary source and an alcohol in an aqueous medium in the presence of an esterase exhibiting a transesterfication activity ratio with the mono-, di-, or triglyceride of at least 25:1 to form the flavour enhancing ester. The reaction may also occur in the presence of an enzyme derived from a lactic acid bacteria exhibiting transesterfication activity, in the presence of a mixture of a lipase and an enzyme derived from a lactic acid bacteria, or in the presence of a mixture of an esterase and one or more enzymes derived from a lactic acid bacteria. Also described are food and diary products containing the esters prepared.
