A method of producing a commercial milk product that has a reduced level of lactose; said process including the steps of: subjecting skim milk to a separation process that is adapted to produce a relatively high protein first retentate and a relatively low protein first permeate; subjecting said first permeate directly to reverse osmosis filtration (RO) to produce a RO filtrate and a RO retentate; directly combining the RO filtrate and said first retentate in appropriate proportions, optionally with or without other milk fractions; subjecting said combination to treatment with lactase enzymes.
