PROCESS FOR MAKING PEANUT BRITTLE

The process comprises mining and heating sugar with syrup to a temperature of 240 F ( approx ) to produce a pumpable plastic product which is evaporated and concentrated and then mixing said heated plastic product with peanut meats while maintaining the temperature. This mixture is then discharged into a hopper with a roller which compresses the mixture against a moving belt to form a layer such that the syrupy mass is thinner than the nut meats. The speed of the belt is adjusted so that the candy is stretched after which it is cooled hardened and broken up into suitable pieces for packaging.
