The invention discloses a low-cholesterol dairy product and a preparation method thereof as well as grafted beta-cyclodextrin rice bran fibers and a preparation method and application thereof. The preparation method for the grafted beta-cyclodextrin rice bran fibers comprises the following steps of mixing beta-cyclodextrin with an alkaline solution of which the pH value is 13-16 to fully swell the beta-cyclodextrin under the temperature of 25-40 DEG C; then mixing the beta-cyclodextrin with rice bran fibers and epichlorohydrin to perform crosslinking reaction under the temperature of 48-60 DEG C. An effect for removing cholesterol in the dairy product by using the grafted beta-cyclodextrin rice bran fibers disclosed by the invention is good, and the production cost is low; only a few of the grafted beta-cyclodextrin rice bran fibers are retained in a final product, and the grafted beta-cyclodextrin rice bran fibers are not sweet, so that the taste of the product cannot be affected.
