Lactic acid bacteria dairy product and preparation method thereof

The invention relates to the technical field of lactic acid bacteria dairy products, and particularly discloses a lactic acid bacteria dairy product and a preparation method thereof. The lactic acid bacteria dairy product disclosed by the invention is specifically prepared from the following components in parts by weight: 100 to 120 parts of raw milk, 20 to 30 parts of an almond kernel extract, 0.8 to 1.8 parts of a strain, 0.1 to 0.3 part of a stabilizer, 0.1 to 0.3 part of a thickening agent, 0.04 to 0.08 part of sodium benzoate, 0.2 to 0.6 part of an acidity regulator and 200 to 220 parts of water. The strain is prepared by mixing lactobacillus acidophilus and lactobacillus plantarum in a weight ratio of (1-5): (1-5); the stabilizer is prepared by mixing cassia twig essential oil and trimethyl citrate in a weight ratio of 9: (0.5-4). The lactic acid bacteria dairy product obtained by using the technical scheme provided by the invention is short in fermentation time, and the preparation cost is reduced; and the prepared lactic acid bacteria dairy product is relatively good in stability and relatively long in shelf life.
