In the production of a fatty product which is solid at room temperature and contains over 20% by volume of an inert gas such as nitrogen and over 65% by weight of fat, the desired amount of gas is incorporated into the fat and the mixture is chilled, with violent agitation, to below 60‹F., e.g. to a temperature in the range 30‹-60‹F., is held for a period sufficient to allow setting, and, after the setting, is formed with the least possible manipulation into bars. A melted margarine mix, of 80% fat and 20% aqueous phase containing milk and salt, is transferred by a pump 7 from a tank 5 through a line 7 to a pump 11 which works at a greater rate than the pump 7, and the inert gas is introduced by a line 13 into the line 9 ; the gas-containing margarine so produced is pumped through the chilling and agitating device of tubes 21 and 23 into a line 27 and is split at 29 for transference to moulding heads 32 and 33 ; the units there moulded are packaged at 34 and removed by conveyers 71 and 73.
