The invention discloses an extraction method for fat in a dairy product, a determination method for the peroxide value of the fat in the dairy product, a determination method for the peroxide value of fat in a viscous dairy product, and a determination method for the peroxide value of fat in milk powder. The extraction method for the fat in the dairy product comprises the following steps: subjecting the dairy product and ethanol to primary mixing so as to obtain first mixed liquor; subjecting the first mixed liquor and water to secondary mixing so as to obtain second mixed liquor; subjecting the second mixed liquor and petroleum ether to tertiary mixing and carrying out standing so as to obtain third mixed liquor; and carrying out filtering and rotary evaporation on the third mixed liquor so as to obtain fat. With the extraction method provided by the invention, fat in the dairy product can be thoroughly extracted.
