A process for the production of K-casein glycomacropeptide which comprises subjecting a casein to an enzymatic milk-coagulating treatment to obtain non-coagulate components as an effluent, keeping the effluent acidic to form a precipitate, removing the precipitate from the effluent, and then subjecting the effluent to a desalting treatment is claimed. K-casein glycomacropeptide obtained by the above process is also claimed.
