PROCESS FOR PRODUCING MARBLED MEAT

A process for producing marbled meat by injecting a cold emulsion of protein and fat into the meat is provided. Firstly protein dissolved in water is heated to a higher temperature than the denaturation temperature of the protein then fat is added to the solution and the mixture is emulsified. The obtained emulsion is cooled to between 0oC and 7oC and the cold emulsion is injected into the meat. Finally the meat is frozen to gel the protein. Preferably, the protein used is whey protein or egg whites.
