A PROCESS FOR PRODUCING SWEETENED CONDENSED WHOLE MILK HAVING LITTLE AGE THICKENING

The process for producing sweetened condensed whole milk provided includes the following steps: (a) treating formulated milk with a homogeniser at a pressure of 80-250 Kg/cm2 to produce milk with fat globules of 1 to 6��m; (b) sterilising the milk at 90-120oC for 2 seconds to 5 minutes; (c) condensing the milk; (d) adding 0.05-0.5% by weight of �� lactose having a particle size of 10��m or less to the condensed milk; and (e) cooling the mixture to obtain a milk with minute lactose crystals. The condensed whole milk produced has a stable structure and a low viscosity even after storage.
