Tea concocted by tart dark plum is disclosed. The tea is characterized in that: the tea is prepared from raw materials by weight in part comprising 300-340 of fresh tea leaves, 50-60 of tart dark plum, 10-12 of green plum fruit, 13-15 of wild jujube pit, 8-10 of radix polygonati officinalis, 4-6 of lily, 6-8 of chamomile, 10-12 of olive, 6-10 of betel nut, 5-7 of grosvenor momordica fruit, 14-18 of groundnut kernels, 10-12 of coconut milk, 6-8 of myrica rubra kernel, 3-5 of seed powder of Chinese prickly ash, 4-6 of table salt, 4-5 of auxiliary agents and 400-550 of water; the tea after being dipped has a tart and refreshing taste, tea usually has tea fragrance with a faint sweet taste, while the tea with a tart taste is not bad for people like tart foods and is capable of appetizing and promoting the secretion of saliva or body fluid; the date pit, the plum stone, the radix polygonati officinalis, the lily, the olive, the betel nut, and the like are mixed, and decocted by adding water to generate steam; the steam rapidly evaporates in a water-removing process due to high temperature so as to allow the flavor to stay and penetrate in the tea leaves; the date pit and the plum stone are quick-fried after the salt and other seasonings are added until the fragrance emits; the taste is unique; and a finished tea product is characteristic and meets taste requirements of most people.
