The invention relates to the technical field of snacks, in particular to a sugar-free snack convenient to eat and a preparation method thereof. The sugar-free snack convenient to eat comprises, by weight, 50-60 parts of buckwheat flour, 20-35 parts of konjaku flour, 6-15 parts of walnut kernel powder, 5-15 parts of peanut kernel powder, 2-5 parts of aloe, 10-20 parts of olive oil, 0.3-1.0 part of salt and a proper amount of water. The method comprises the following steps: taking a proper amount of buckwheat flour, konjaku flour, walnut kernel powder, peanut kernel powder, yeast powder, aloe, olive oil, table salt and a proper amount of water, uniformly mixing, fully mixing and uniformly stirring to prepare a panicle shape, fermenting for 20-30 minutes, extruding, cutting, shaping and baking the panicle-shaped main flour after fermentation, cooling to room temperature, and packaging to obtain a finished product. On one hand, the invention provides the sugar-free snack convenient to eat, on the other hand, the preparation method of the sugar-free snack convenient to eat and the equipment used in the preparation method are provided, the equipment is high in automation degree and stable in work, and the preparation efficiency of the snack is greatly improved.
