The invention discloses a spicy olive can and a preparation method thereof, can solve the problems that the olive fruit pulp in a can is limp and has poor mouth feel due to the fact that olive fruitsare subjected to high temperature for a plurality of times in the processes of enzyme deactivation, soaking and boiling and sterilization in can preparation technologies in the prior art. The method comprises the following steps of: 1) fruit selection: selecting olive fruits for later use; 2) cleaning selection and cleaning: performing cleaning with clean water; 3) bitterness and astringency removal: soaking the cleaned olive fruits in 1% baking soda solution for 6-8 hours; 4) dealkalization: after the bitterness and astringency removal, soaking the olive fruits in 1% acetic acid solution for6-8 hours; 5) seasoning water blending: adding 1% of table salt, 0.1% of potassium sorbate, 5% of chili segments and 3% of Chinese prickly ash grains into purified water by mass; 6) packaging: addingpretreated olive fruits and seasoning water into a canning bottle, and then capping and sealing the caning bottle; and 7) sterilization: placing the can subjected to capping and sealing in a sterilization device, and performing sterilization treatment to obtain the finished product.
