The invention discloses spicy gluten and a preparation method thereof. The spicy gluten is prepared from the following raw materials in parts by weight: 24 to 26 parts of glutinous rice flour, 12 to 14 parts of radix puerariae powder, 6 to 8 parts of blueberry juice, 1 to 1.4 parts of dendrobium officinale leaf powder, 1 to 2 parts of table salt, 4 to 6 parts of white sugar, 8 to 10 parts of oliveoil, 2 to 4 parts of pod pepper, 3 to 5 parts of garlics, 4 to 6 parts of Chinese prickly ash seeds, 5 to 7 parts of chilli powder, 5 to 7 parts of Sichuan pepper powder, 0.05 to 0.07 part of monascus and 0.08 to 0.1 part of sodium bicarbonate. The spicy gluten prepared through the steps of dough kneading, frying oil manufacturing, formation, frying and the like has the advantages that the radixpuerariae powder is added into the raw materials, so that other enhancing agents do not need to be added into the prepared spicy gluten; the spicy gluten is chewy; the Dendrobium officinale powder andthe blueberry juice are added, so that the defect of insufficient nutritional ingredients of the traditional spicy gluten is avoided; the spicy gluten is fried by the olive oil; the content of hazardous substances of the spicy gluten caused by high-temperature frying is reduced. The prepared spicy gluten has low salt, low oil and low food additives; meanwhile, a certain health preserving effect is achieved.
