The invention relates to sour and hot non deep-fried instant noodles. The sour and hot non deep-fried instant noodles comprise instant noodles and a seasoning bag, wherein the seasoning bag comprisesa sourness seasoning bag, a pepperiness seasoning bag and a vegetable seasoning bag; the sour and hot non deep-fried instant noodles comprise the following components of 30-42 parts of barley flour, 50-65 parts of wheat flour, 20-27 parts of corn flour, 12-18 parts of highland barley flour, 8-13 parts of tea-seed oil, 5-9 parts of olive oil, 3-6 parts of rapeseed oil, 7-15 parts of iodine-containing table salt, 10-16 parts of algae colloid and 9-17 parts of plant cellulose powder. A making method of the sour and hot non deep-fried instant noodles comprises the following steps of performing dough mixing, performing pressing and shaping, performing cooking and performing hot air drying. The sour and hot non deep-fried instant noodles are good in mouth feel and rich in nutrition, are favorable for improving the health of bodies of eaters when being eaten, and overcome the defects that when being eaten, conventional deep-fried instant noodles are harmful to human health. The condition thatin the deep-frying process, carcinogen of acrylamide and the like damages human health, is avoided.
