The invention relates to oyster sauce, in particular to pungent and spicy oyster sauce and a preparation method thereof. The pungent and spicy oyster sauce comprises the following raw materials in parts by weight: 15-20 parts of pepper, 1-3 parts of Chinese prickly ash, 4-8 parts of chicken extract, 2-6 parts of table salt, 25-30 parts of oyster sauce, 16-23 parts of green onion, 18-25 parts of ginger, 3-10 parts of onion, 2-6 parts of olive oil, 5-9 parts of mashed garlic and 20-35 parts of water. The pungent and spicy oyster sauce disclosed by the invention has the advantages of mellow fragrance, excellent taste, high nutritive value, convenience for production and capability of being stored for a long term, can enable food to be more tasty and delicious, and meets higher requirements of people on food taste.
